Sugar syrup (Ater)is used in a wide variety of Arabic sweets. It is either drizzled over baked or fried oriental desserts, or baked or fried goods are dipped in and lifted out to sweeten and enliven them. Simple syrup is made by stirring granulated sugar into hot water in a saucepan until the sugar is dissolved and then cooling the solution. How do you make sugar syrup thicker? Preparation: In a high-sided saucepan over medium-high heat, bring cold water and sugar to a boil. Turn the heat to low and stir constantly until the sugar dissolves completely and the mixture is clear, approximately 3 to 5 minutes. Remember – the longer you boil it, the thicker the syrup will be when cooled. How long does homemade sugar syrup last? 4 weeks How to store simple syrup: Store simple syrup in an airtight container, in the fridge, until ready to use. Basic simple syrup will last up to 4 weeks, however flavored simple syrups should be used within two weeks. How do you know when sugar syrup is done? Using a spoon: Place some syrup in a spoon and let it drip away in the saucepan. When the syrup flows away easily, it means it is still watery and not ready. Continue boiling until the flow separates into drops. When a final drop remains hanging from the spoon, it means that the density is right and the syrup is ready. Why is lemon juice added to sugar syrup? The citric acid in lemon juice hydrolyzes the sucrose molecules into glucose and fructose as you heat the sugar. The syrup is "inverted" in the sense that the sign of its optical rotation has changed because sucrose has a large positive optical rotation while fructose has a large negative optical rotation.
