Ingredients:
* 3lb beef brisket, cut into 2-3 inch cubes
* 4 tbsp canola oil
* 2 yellow onions, diced
* 2 tbsp flour
* 2 celery stalks, diced
* 4 carrots, sliced
* 4 cloves garlic, minced
* 1 tbsp tomato paste
* 1 tbsp grape jelly
* 2 bay leaves
* 1 large thyme sprig
* 2 cups beef stock
* 3 cups Guinness
* salt and pepper, to taste
Directions:
In a large pan, bring your canola oil to medium high heat. Brown your beef and season well. Add the onions and sauté for 4-5 minutes until soft. Add your flour and mix very well. Remove from stove and add the beef mix to your crock pot. Add your remaining ingredients to the slow cooker. Mix well until all the ingredients are well combined. Cook on low for 8 hours.
