Ingredients
4 servings
1 cup Colocasia/Taro leaves with steams (Aluchi pane), peeled & chopped
1/2 cup Amaranth leaves (Math), chopped
1/4 cup Yam (suran), peeled & chopped
1/4 cup Ambadi / Roselle Leaves clean and air dry
1/4 cup Chavli / Black eye peas Leaves clean and air dry
1/4 cup Green beans (Shravan ghevda), chopped
1/4 cup Yam / Suran chopped
1/4 cup Arbi / taro pealed and chopped
1/4 cup Sweet Potato (Ratala) pealed and chopped
1 Raw Banana
1 indian Corn
1/4 cup Snake gourd (Padwal), chopped
1/4 cup Ridge gourd (Shirali), peeled & chopped
1/4 cup Sponge gourd (Ghosali), chopped
3-5 Green chillies, chopped
2 tsp Tamarind pulp
1/4-1/2 cup Fresh scraped coconut
1 table spoon jaggery
to taste Pink Himalayan salt
Steps
Wash and chop all veggies as desired size. Chop yum into small pieces, it takes more time to cook.
Combine all veggies in a pressure cooker.
Add chopped green chilies, soaked peanuts , salt with one glass of water . Mix well.
Cook till two whistles. after two whistles open the lid.
Switch to low heat.
Add tamarind pulp and scraped coconut with jaggery. Mix well and cook for 1-2 minutes.
Serve warm with ghee on top. Best eaten with Bhakari/rice roti.
