Dry roast 4tbsp coariander seeds, 1 tbsp cumin seeds, 1 tbsp fennel, 1/4 tbsp fenugreek, 1tbsp black pepper, 4 small pieces of cinnamon, 10 cloves, 1 black cardamom, 4 cardamom, 1 star anise,small piece of nutmeg, 2 bay leaves untill aromatic or foe one minute in a low flame.
Transfer the spices to a mixer jar, add 1 tbsp turmeric powder and grind into a fine powder. Allow the powder to cool and transfer to a airtight container. You can adjust chillies according to your spice level.
